Jewelcrafting is OK if you're an enchanter. Smithing to make banded armor is alright at low levels. The best way to make money, though, is to get to a high level and either farm or power level.

Mage, druid, necro and shaman are all pretty easy to solo with classes, and with each them of them around level 30 you can farm up quite a bit of money. A lot of players including myself leveled/farmed the Misty Thicket guards, great exp and 10pp per kill from the spears they drop. I know 2 players who have farmed up to like 30k from those guards.
