Default Back in the faydark after 20 years

Hello
So I played EQ after the Kunark expansion came out in....what, 2000? 2001? I played the game off and on until maybe 2005 or so. Lost a semester of college to it lol. I played it with my (late) brother. I heard about project 99 and had to see it. I remember the faydark, the orcs, and I really want to re-experience it. But MAN is it a culture shock and throw back. I'm on project 99 green velious server. I had a few questions to help ease me back in.

1. Starting in kelethin or felwithe. I approached an npc, hailed them, and in the dialogue box it looked like there as a hyperlink to click to get a quest, specifically outside of the emerald weapon shop in kelethin, gallin something. It was about hunting meat. I clicked it but nothing happened. It was also white. What does that mean? I also typed it into the chatbar (the exact phrase he used) while targeting him and nothing happened. Am I wrong and this isn't a quest? Or am I missing something on how to progress a dialogue tree?

2. Could you give me a handful of starter tips? Again it's been a few decades and resetting my mind to this old school of gaming is a bit difficult.

3. Is there a better server for me? I'm looking for the older EQ experience, maybe up through planes of power or something like that. Not into PVP. PVE all the way. I see the heroes journey server has a large number of players but I think that has the homogenized starting zone in the mine, right? Or am I incorrect there?
