What's the best guild for someone who plays 3am est to 12pm est?

Depends what you want to do. As far as raiding, go with whatever guild you want if you want the big targets. There's 3 main competitors for big targets on Green, and the spawn time of the mob dictates the raid time. Sometimes mobs spawn at 4am est, sometimes af 10pm, etc etc.

For general guilding, I'd find out maybe whk has a large euro population

There are significant populations in Kingdom, Good Guys, Castle, and Safe Space during those hours, but I think Safe Space has the most during those hours. I don't know whether Lineage or Legacy of Fires would - I haven't been on during those hours lately. Ancient Blood is worth considering if Iksar. And if you are not interested in raiding, Friendly Druids might be worth a look. All the best.
