As a Warrior ... AC or Dex?

So it seems like in alot of cases you have to sacrifice some plate AC for some chain items with dex on them. If a Warrior is supposed to get 200ish Dex in order to have enough procs to get/hold aggro, then is it worth it to lose so much AC for it?

Also how reliable are procs if your at 200 dex? Cause it seems like in order to hit 200 dex you need to give up alot of other stats + ac, like the 13dex cloak for example you lose a 10ac 5str 55hp cloak in place of it, or dex jewlery bracers you lose 9ac 10str bracer etc. Im not really sure how I should be trying to balance it out cause I dont know how much of a diff dex really makes
