Pretty much anything with olive oil and GARLIC is a great success. And yeah I agree. There's no oil like olive oil.

I think oil is all about the application. Olive oil has a relatively low smoking point, so fits more Italian applications, and yes, because of that, I use it a shitload.

I also prefer vegetable oil for some of the flavored oil mixes I make. A very simple and delicious oil mix?



Mix 2 cups vegetable oil with a medium sized bottle of crushed red pepper flake, and let it sit for a week or two.


Delicious and simple (yet patient) way to add a lot of spice to many of the foods you cook!

Just had this

Cream of brocoli:


Ingredients

* 2 tablespoons butter
* 1 onion, chopped
* 1 stalk celery, chopped
* 3 cups chicken broth
* 8 cups broccoli florets
* 3 tablespoons butter
* 3 tablespoons all-purpose flour
* 2 cups milk
* ground black pepper to taste

Directions

1. Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
2. Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
3. In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

I found the recipe veeeery good but quite chunky because i mashed the soup with a potato masher instead of blending it cuz im lazy. Add a cup or 2 less of brocoli if youre lazy like me and would like something more like a cream. But if you dont mind chunks, go for it, its really good! I used veggie broth instead of chicken, and no celeri.
