cool how did i miss this thread. i went to culinary and have been in the industry for almost 10 years now. this is half from home half from work

spring rolls

caramelized pork belly (thit kho kho) over jasmine rice, topped w/ coriander

smoked salmon on black truffle risotto w/ wilted chard

tenderloin on caramelized onion, micro green, and prawn over custard in nest of kataifi

strawberry gel over chocolate mousse w/ dark chocolate, fresh strawberry, and dehydrated strawberry (assemble and take like a shot....... of rape)

this was my turkey last year. stuffed it w/ a fat sprig of parsley, a whole clove of garlic, bunch of thyme, and a couple apples

rubbed it w/ rosemary and more thyme and a pound of butter. kept spooning the butter and herbs over it for a couple hours and some olive oil for good measure/taste

don't mind me mom's awful serving platter.........

damn... i thought i was pretty good in the kitchen until i saw you drem. that's amazing

edit: pulled off my phone because this thread is awesome. friend gave us molds and i tried them last week

Yup I've made my own rolls, and as somebody stated getting the rice just right is the hardest part. The first time I made it I didn't cook it long enough so it was crunchy, the second time I cooked it too long so it was sticky, and the third and forth times my fiancee made it and it turned out perfect. Then I told everybody in my guild how awesome it tasted and they just laff'd at me. [You must be logged in to view images. Log in or Register.]

Aside from the rice it's all pretty easy, just make sure you roll your nori tight o it doesn't fall apart or you don't use too much of it!

Too much rice has been my biggest issue in making sushi rolls. I tend to make vegetarian rolls so they probably need more rice, but that has carried over into actual fish rolls... they did not roll well.
