Click the game screen. Press Alt + Enter on the keyboard to make it full screen.

If the window keeps minimizing after you make it full screen type /load and select your UI and reload it. It will refresh it back to normal.

That helps a lot, however as soon as I alt tab out - it resets back to small again and alters all the sizes of my other windows
