There are two ways to find guilds: the forum and the wiki. Both have trade-offs.
Wiki is nice and organized, with tables showing things like when guilds raid or how serious they are about raiding. However, the wiki can be out of date (at least for some guilds) so any guild you are interested in you have to click the forum link to go make sure they're still around. Or you can just start in the guild forum, where everything (on the first few pages at least) is up to date ... but it's not organized any way, so you have to click through every guild's post (including lots of raid guilds that aren't the type you'll want) to find the ones you're looking for. Personally I'd recommend starting with the wiki, looking at the casual guilds (that's the kind you want), making a list of 3 or 4 that sound promising, and then clicking on their forum threads to see what they're up to and if they're still around. Once you find one you like you can either PM the guild leader, or look at the list of officers and talk to one in game.
