Can someone give a real quick rundown on how the red server works? What about the population levels? Is it a thriving server?

If you enjoy social gaming, play Blue.
If you enjoy PvPing with a population that contains a high percentage of enraged nerds, play Red. If you're hardcore, play both. | ||

If you want high inflation and a server near the end of its lifespan in terms of an economy, blue definitely the way to go. You might need to farm 50000 Highkeep guards or something silly to get on the ladder... or make a druid and join Dial A Port (literally be a slave for weeks/months to have full tunnelquest access). Or if you're the type of player that likes to farm his own gear and the sense of accomplishment that comes with that... much more rewarding on red. Just remember to farm/buy/etc some magic resist (MR) gear for pvp, every little helps. <3
