Forget the clan part... Wu-Tang ≠ Wu'Tang. Not sure about the references you mentioned, but as far as I've gathered over the years, Wu-Tang is a direct reference to one of the many kung fu films that influence their names and the whole wu tang mantra. Pretty sure "Wu'Tang" is something you just made up!
