Going gluten-free is a health concern for some people. Celiac disease specifically is one reason some people can't eat foods with gluten in it.
Going gluten-free because you think it's more healthy? Lawl. "tarded I fucking hate fad dieters, too.

The friend I cooked for has digestion problems with gluten. She's vegetarian because she's Tibetan Buddhist, from what I can gather. I'm going to make a vegetable risotto for her next time. I'm really trying to avoid cooking with tofu; it's not my favorite.

If you want to help them, spend 6 months traveling and TEACH the common people how to grow or use resources more efficiently. Did you know you can filter water with a locally made clay type pot which will be effective and last years? You know you can grow crops in the desert?

I don't make this often as it's definitely a set of higher priced ingredients. Barring the carb load (hey, it's fruit sugars, at least), this is a great meal in and of itself: mixed greens, walnuts, dates, oranges, raw goat cheese, lemon and olive oil dressing. I would eat the hell out of that salad! There's something inherently awesome about salads with fruit, nuts and cheese.
I wish more of us lived in closer proximity. My favorite get-togethers involve a kitchen full of friends cooking together.
