you only have to do one quest for the epic. There are three mobs depending on your class. It takes like 2-3 people to kill it. Simple as.

Edit: I assume the tiered epic quest was something implemented at a later date in the game. I don't know what level you get the epic quest but I did it at 50.. Just ask a level 50 of your class what zone / npc did they get the quest from.
