In an extremely simplified example, it works something like this:

Let's say 2 cars sitting still in the middle of the road is the 'moment'. Even if I have to get a very powerful telescope, as long as I can see the cars, I can do the math to figure out how long ago they were in front of me.
Because this is space, and therefore no earth curvature to obstruct Line of Sight, and no gravity to deflect the path of travel, you just need to find the car.

There is still quite alot of matter in the universe that hasn't coalesced into a celestial body.
