The soup looked better to me without the blender. If you consciously attempt to use your knife correctly (watch a cooking show or get a book), you'll get faster and faster so that chopping vegetables is trivial. Keeping your knives sharp is very important. Why don't you eat legumes? I make a lentil stew with carrot, onion, potato, green beans and spinach that is not too far off your potato soup. The chili recipe looks pretty good to me, too.
