I dunno. I've driven through that town dozens of times, and I've never had the urge to stop for any conceivable reason. Do you guys have pollution warnings and stuff from all the industry down by the river?

Why do shit cities make good bbq?


Kansas City is the same.

Well, to understand this, you have to understand where bbq came from. It started as a method to make the nastiest cuts of beef taste good. You really have to work to make cow asshole edible. Then once they applied that technique to the other better parts of the cow: voila, you have awesome bbq. So the cities with the best bbq traditions are the ones where they mostly had to eat cow asshole in the past.

I thought it was largely brisket (the chest meat of the cow) that was tough and not tasty that BBQ was 'invented' to make good.

cheaper less desirable cuts of meat.

It's like chicken wings, back in the day nobody wanted them because there is so little meat. So people put a lot more effort into making them taste good and now bam everyone wants them
