ok, so starting off I have to be war monk thief black mage white mage or red mage? I am reading this Getting Started.

Ranger is closer to the EQ version than monk is. That's a job you have to unlock though once you get another job to 30+

You'd need to level ninja (another unlockable class) to use as a subjob if you wanted to dual wield with it, but thf or warrior are also good ranger subs. They pump out a LOT of damage, and are pretty sought after for parties, too
