Absentee ballots have to be requested, which is at least one extra layer of security. The type of mail in voting being advocated for in this election has not been deployed before in a country of 360 million people. If a mail courier, who is presumably a human being, has a particular political persuasion, and knows he or she lives in a historically red or blue county or district, they can simply dump the ballots to favor their candidate. There will be no record that those ballots were not collected or counted, because they were not requested. Among a litany of other vulnerabilities, again not specific to one party or the other. They are fundamentally insecure.
