tell me more, I watched a maangchi vid about it and wanted to do it but I don't think it can live up

Mine was pretty good. It wasn't great. Definitely edible. Not truly worthy of being that traditional family recipe. I made it by hand the old fashioned way and stored it under the steps in the basement. It probably could have fermented better, lived a little longer in a cooler spot.

I probably was to clean with the whole process and it probably could have used some wild yeast.

The spices where pretty good.
