Ah yea, I forgot I've also done BBQ blue cheese chicken sandwich's and burgers. Usually use sweet baby rays as the sweetness and thickness plays well with the blue cheese. Mix in blue cheese and sweet baby rays until its something like a paste of near equal amounts. When burger or chicken sandwich is almost done paste some of it on top, and add a slice of your choice of cheese (usually something white.. jack/swiss/etc.) on top of the paste to melt over and hold it in there! mmmmmm mmmm bitch

Here's a trick: when preparing your burger (has to be home made burger, not a store bought, pre-formed pattie), form a small hollow in the middle of the ball, put a small glop (about a Tbsp) of blue cheese (or other soft cheese) into the hollow, and then form the full burger around the cheese. Cook as normal, though you'll have to pay a little attention if pressing the burger to make sure you don't press the cheese out.

I do something similar when I make cowboy sliders (shredded cheddar, jalapenos, cilantro, bacon), but I generally don't like anything but lots of garlic stuffed into them otherwise. Dunno, had plenty of blue cheese burgers with blue cheese in them and really just never enjoyed them. I am pretty picky with my burgers though.

I dunno, the cheese I had was blue and red and moldy and my friend was slicing it and putting it on crackers. GROSS.

Next time do this:

Baguette thinly sliced, brush with olive oil, put in oven on 350.

Cut up sun dried tomatoes, artichoke hearts, and get a creamy cheese (chimay stuff is excellent, I honestly don't know cheese names I just grab some that look good.)

Once slightly toasted pull baguette slices out of oven, place a little of each above item on top. Sprinkle with salt, pepper, and garlic, place back in oven for a couple minutes to warm.
