My freshly planted garden ( First time in my new house/yard ) has half my plants turning yellow. ( Pumpkin, Zucchini to name a couple. ) Some info says iron deficient.. some says underwatering.. ( unlikely, but possible i guess )

Unless you have wilting it isn't overwatering.

If the yellow is blotchy its nitrogen not iron

If yellow is on NEW leaves and old leaves its iron

Nitrogen deficiency will never make new leaves yellow.

Has it been raining a lot near you? If it has it can be magnesium but regular fertilizer will fix that. If you are growing food I recommend miracle grow organic plant food from home depot. Its 26$ A bag but its properly composted safe chicken poop and it is very very good.
