can I then play on two different servers at the same time?

I have only used two separate folders (two separate executables) to run two instances of EQ on one PC.

And you can simply copy an entire EQ folder into a new one, no need to re-install anything.

probably have to do this if you want to run both at the same time.

Been a while since I was on EZ Server, but I'm pretty sure I ran 6 chars off one executable/folder a few times.
