Firstly, for a min/max standpoint you're best off making a Barbarian rogue if you're not picky on race due to their high str/sta.

Regardless, this is one of those topics that's endlessly debated. Some will tell you 25sta/5str to get that extra 80 hp at lvl 60 vs going 25 str/5 sta. Personally I'd still go 25str/5sta with any rogue race because the higher strength will make the leveling process more enjoyable and you will be able to hit max quicker and swap in other items like resist gear while still having tons of str.

What is the point of putting 5 into sta? If it only means 80hps @ 60 how many less will it be for 5. Why not dex?

Strength for pure levelling if you actually only bother going to 50. Stamina for levelling 50+ because if you end up raiding at all you will max strength easily enough without those extra base points.
