First of all - Hit points is the best stat in the game. Full stop. Period.
In a pure grind situation, when not receiving complete heals.. AC is best. In all other aspects of this game HP's are better.
They are however a function of each other, and once you reach around 5k hp buffed I would start considering swapping out the EoE and focussing more on AC. Key word, consider.
