AE stun doesn't break mez. Maybe I'm reading that section of your post wrong, but I don't want any new chanters to get bad impressions of a super-important spell.

You'll generally want to keep root and ae stun up (I often root mezzed mobs so I don't end up tanking them later with a warrior in the group). Keep a utility slot plus charm and tash, and then whatever spells are useful in that group. Maybe AE mez, maybe another AE stun or a slow.
Just by grouping, you should pick up the basic how-to of the class as long as you come in with some understanding of what all of the spells do. Most of the dungeuns before the mid 30s are easy enough that you can learn the class in peace and be ready for the more difficult camps later on.
