That's a really interesting question and the article you linked is too. Yes companies react to customer demand. However as this
article's author describes there is a confict of interest in the industrial food industry, which is that it is lucrative for them (when you can just ignore externalities) to keep consumers ignorant about nutrition.
And when you consider the interlocking directorates involved and sheer budgets I'm not surprised. There is this infographic from mid 2010s (lacking citations) floating around the internet that I believe shows the budgets of animal rights organizations versus the meat industry
