I been watching a lot of cooking shows lately and it makes me wonder how great chefs consistently ruin their dish.

Iron chef, Top Chef, Hell's Kitchen... most of the prepared courses get negative reviews

Iron Chef *JAPAN* is one of the best / most real cooking shows. Absolutely fantastic.

If you're referring to that show.....then it's often due to experimentation. Morimoto is well-known for this.

Just think about how different traditional Japanese and traditional American cuisine is -- now imagine trying to merge the 2 to create and original recipe on the fly.
