young deer doesn't taste good imo. We make sure they're mature 3+ years before 'harvesting'.
Mostly males based on their horns. Since Doe make babies.

I killed a couple of does on doe day when I was a kid. Venison is yummy. I think its best mixed in something, like a chili or pasta dish.
