have you tried leveling while constantly checking to see who is in zone? fighting off other players that engage you in pvp? running from a twinked fungi/epic rogue that wants to rape ur bum?

How do people get such great items on DayZ? I keep looking into the air bases and crap but none of them have great weapons

Is it just random or do some item spawns give better loot always?

So people can just make their own servers with a bunch of loot, and then hop onto public servers and play with the rest of people who farmed under less-loot situations?

Well you can server hop to un/low populated servers especially after restarts and loot without danger. Then go to populated ones and kill.

i would say a raid scene that has actual competition is a lot more alive than people sitting there with autofire javelin scripts and duck casting call of the hero for hours on end all so that you have a 1 in 5 chance of killing the mob and then the raid loot getting taken away because someone in the opposing guild got confused about who was allowed to hit it
