Multiple Tradeskills
Tradeskills are one of my favourite things about the game, and I like to level up as many as I can while playing.
But it's been years since I've played, and I forget - what is the point at which you have to choose one to advance with, and leave the others at a lower skill level? Is it the first one to get to 201 is your Mastery, and then the others can only go up to 200? Don't want to accidentally do the wrong one! Thanks

Yes. Exceptions are racial / class based trade skills.
Cecily is 250 make poison (Rogue), 248 brewing, 200 fletching.

Yep, you have it exactly right: first one to hit 201 can go all the way to 255, while all the others will be capped at 200.
Keep in mind that Alchemy is Shaman specific and Tinkering is Gnome specific, if you want to do either of those.

Was there ever a quest where you can undo your chosen master tradeskill?
Like with switching from one specialization magic line to another...
