![]() The tragedy about rice pudding is that it's so underrepresented. Rice pudding's delicious and I've never met someone who explicitly didn't like it, yet you rarely see it featured as a dessert in your school, college, or restaurant of choice. You see endless amounts of ice cream, cake, and pie, but rice pudding is relegated with the lesser desserts such as bread pudding and cobbler. Now don't get me wrong, good crunchy cobbler can be delicious, but my experience in my undergraduate university's dining hall (UUDH for future reference) was that there was way too much filling (and it was thoroughly mediocre at that) and the crust was lacking as well as soft and uninteresting. And bread pudding? If there's one thing I'm not interested in, it's soggy bread, unless I just recently dipped fresh bread in something delicious like some soup remnants. Meanwhile, the rice pudding at my UUDH was delectable. Rice pudding is hard to ruin, it tastes great, it has an interesting texture, but we barely see any of it! In conclusion, restaurants, schools, and UUDHs, what gives?

![]() I SO fuckin agree with this shit. Rice pudding rapes faggots, leaving them tasting delicious. That's doesn't even make sense but I don't care 'cause rice pudding is THAT good.

![]() Ingredients
* 1 cup cooked long grain or basmati rice * 1 cup whole milk * 1/2 cup heavy cream * 3/4 cup coconut milk * 2 ounces sugar, approximately 1/4 cup * 1/4 teaspoon ground cardamom * 1 1/2 ounces golden raisins, approximately 1/3 cup * 1 1/2 ounces chopped unsalted pistachios, approximately 1/3 cup Directions In a large nonstick saute pan over medium heat, combine the cooked rice and milk. Heat until the mixture begins to boil. Decrease the heat to low and cook at a simmer until the mixture begins to thicken, stirring frequently, approximately 5 minutes. Increase the heat to medium, add the heavy cream, coconut milk, sugar, and cardamom and continue to cook until the mixture just begins to thicken again, approximately 5 to 10 minutes. Use a whisk to help prevent the cardamom from clumping. Once the mixture just begins to thicken, remove from the heat and stir in the raisins and pistachios. Transfer the mixture to individual serving dishes or a glass bowl and place plastic wrap directly on the surface of the pudding. Serve chilled or at room temperature. | ||

![]() Rice pudding, or arroz con leche is more available here in south florida where I live. The availability might have to do with the demographic of your area.
