MEXICAN MEATBALL SOUP (ALBONDIGAS)


Meatballs
2 lbs lean ground beef
2 cloves garlic, minced
1 sm onion, minced
1/2 cup italian breadcrumbs
2/3 cup uncooked long-grain white rice
2 eggs
4 Tbsp water
1 tsp salt
1/2 tsp black pepper

Soup
8 cups water
8 tsp beef bouillon granules
1 clove garlic, minced
1 small onion, minced
1 lime (need juice only)
6 carrots, sliced
4 stalks celery, sliced
2 lg potatoes, peeled & diced
2 (14.5 oz) cans stewed tomatoes (mexican style)
2 tsp chili powder
1 1/2 tsp dried oregano
2 tsp ground cumin
1 tsp crushed red pepper flakes
fresh cilantro (chopped, for garnish)
salt & pepper to taste


Directions
Mix all meatball ingredients together and shape into tiny balls.

Heat the water in large stock pot and add bouillon. Bring to a boil and drop in the meatballs. Cook for 5 minutes. Add garlic, onion, stewed tomatoes (with juice), chili powder, oregano, cumin, and red pepper flakes. Bring to a boil again, then add the carrots, celery, potatoes, and lime juice. Bring down the heat and simmer for 30 to 45 minutes, while stirring occasionally, until the vegetables are tender. Season to taste with salt and pepper. Garnish with fresh, chopped cilantro.

Sorry Sidelle I got you beat this time. I doubled the amount of cayenne and it was pretty good

Spicy Mexican Chocolate Cookies

INGREDIENTS

1 stick (4 ounces) unsalted butter
4 ounces good-quality unsweetened chocolate, coarsely chopped
1 cup packed light brown sugar
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tablespoon ground cinnamon
1 teaspoon chili powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 cup semisweet chocolate chips

DIRECTIONS

Preheat the oven to 325 degrees F.

In a heatproof bowl set over simmering water, melt the butter and chocolate together, whisking until glossy and smooth. Alternately, the butter and chocolate can be melted in the microwave (in a microwave-safe bowl) in 25-second increments, whisking between each interval. Cool the chocolate mixture to room temperature.

In the bowl of a stand mixer fitted with the paddle attachment (or a hand-held mixer), beat the brown sugar, granulated sugar, vanilla extract and eggs on low speed until well combined. Pour in the cooled chocolate and continue to mix until the ingredients are evenly distributed.
In a medium bowl sift together the flour, cocoa powder, cinnamon, chili powder, baking soda, salt and cayenne pepper. Add the dry ingredients to the chocolate batter and mix on low speed until just combined and no visible flour remains. Fold in the chocolate chips with a rubber spatula or wooden spoon.
Working in two batches, scoop 12 balls of dough(preferably using a small ice cream scoop with a spring handle, about 1 1/2 tablespoon size) onto a parchment-lined sheet pan, leaving at least 1 1/2 inches of space between each cookie. Bake the cookies, one pan at a time, for approximately 14 minutes, rotating the pan halfway through cooking time. The cookies should be puffy and still fairly soft when removed from the oven.

Immediately slide the cookies, still on the parchment paper, onto a wire cooling rack. Cool just a bit before serving, 5 to 10 minutes.Cookies can be stored in airtight container for up to three days, but I prefer them on the day they are baked.

There was a time where I would have thought these cookies would be awful. But a couple years ago I was surprised to learn that chocolate and cayenne can be amazing together.

Ingredients:

1 small Greek coffee-sized cup of plain flour
1/2 small Greek coffee-sized cup of water
As much vaginal yeast as I could scrape off a dildo I put in my vagina–my estimate is that there was about as much of it as would lightly coat a single tine of a fork, and no more.

Method:

Mix the ingredients together.
Cover in foil, leave
The next day, “feed” it 1 small Greek coffee-sized cup of flour, 1/2 small Greek coffee-sized cup of water.
Cover it back up
Repeat the feeding
idk what I’ll do next, I’m only on the third day.
