Literally loled at that. The guy you linked is an idiot and not a particularly good cook. Not all onions have to be caramelized. His home fries look just fine, although I'd be more inclined to and do serve that with a vegetable omelet.
I like the flavor of tough cuts like flank and always cook them with low heat and cut them on the bias. There's no reason to ever char the fuck out of beef. Not only does it taste bad, it releases free radicals and is therefore carcinogenic.
