As someone who's interested in this and is still leveling (59 shaman for now), I enjoy reading your posts, so don't stop! This whole challenge is about pushing the envelope of what is possible, and doing more with less. So seeing people under 60 kill even low-tier stuff is pretty cool, I think.
Personally, I've only checked off a couple of mobs on the list, and I haven't even played much in the past month. But learning to survive in HS north has been pretty fun, and it's a lot different for a Shaman than an Enchanter.
