You shouldn't be having any trouble copying, deleting or moving files in the EverQuest program folder in Windows 7, unless, possibly, you're not logged in as Administrator and all non-admin users have been denied the right to install or remove programs.
Either log out and log back in under an Administrator account to make the changes, or if you don't want to do that
this page tells you how to run the Windows File Explorer with Admin privileges.
Once you do that, you should be able to copy and replace files in the EverQuest folder. And I would forget about copying text into and out of files unless you absolutely have to; you're just liable to mess something up!
