There are plenty of Darkforge helms on the server, so I'm going to assume you did something wrong.
If you didn't hand in the pieces all at once, they were probably eaten due to no multiquest support in the script.
Eventually, all quests will be written as multiquestable. Until then, only expect it for Kunark or Epic npcs unless specified in patch notes.
