I ran a few events when I was GM on VZTZ. These were lame/smalltime compared to what was on live (or here), but the two events that everybody seemed to like were:
1.) On Easter I summoned "Jesus" (zombie NPC) who had all kinds of AoE abilities and healing spells. I guess this would qualify as a PvE raid encounter.
2.) Catch The Bard. There was a high level bard on the server that everyone hated - his name escapes me - and I enlisted him to participate in this event. I buffed him with everything and broadcasted that the first person to kill him would get a blue diamond. He did his part and managed to stay alive for almost an hour running across the world before someone finally killed him.
The one that I regret doing was a FFA PvP rumble. The zone ended up crashing. People broke rules. People started killing eachother when they weren't supposed to when we were organizing it. Etc. I think those large-scale PvP events are a lot of fun but you have to prepare for the shit to hit the fan anytime you gather 50+ people together in the same tiny zone on a FFA red server.
