Enchanters are pretty common at the high end. I seem to remember Uthgaard posting something that said 1/6 L55+ characters was an enchanter

Personally if I was joining a new server I'd go Monk. Solid class from 1-60 with fun abilities and you can never have too many monks for your raid. I think my iksar warrior will be straight up worse than a monk - the only reason I'm playing him is I just want to try something different.
