In your eqclient.ini file, in your EverQuest directory, there are a bunch of lines that set the games resolution (different ones for windowed, full screen, and ... I honestly have no idea).
They look like this:
WindowedWidth=800
WindowedHeight=600
Width=800
Height=600
If your values (for whichever mode you play in) are too small, that might be the cause. Try increasing them, restart the game, and see if it helps.
