In EverQuest you can (usually) tell if an NPC has more to say on a topic when you see them use "[]" in their speech. For instance, your guildmaster is part of a larger quest for Rangers. If you ask him (as part of that quest) "Where can I get an Enchanted Bow?" he'll respond "Alas... Another ranger in search of the [Rain Caller]. She is no more."

If you say something like "What is a Rain Caller", he'll respond with more "[]" text about a "[deal with the fairie folk]" and "[remaining components]", and you can ask about those chunks of text to learn more. But ... the NPCs don't actually care whether you talk to them or not (except for specific quests where they give you an item if you ask), so if you want you can just read the story in the wiki (or not) and then skip to turning in the items for the quest.

At your level most quests just involve collecting animal/monster parts and turning them in, so "killing mobs" and "doing quests" are basically the same thing. There is one quest that involves delivering a package from one NPC to another, but killing stuff and doing the other quests will probably be faster XP.

You can find a list of the quests for your starting area (three "turn in parts" quests and one delivery one) in the wiki's https://wiki.project1999.com/Felwithe_Starting_Guide. That page also mentions where to find key vendors (and the bank), what monsters to hunt (and which to avoid), etc.
