Spices were heckin' expensive though, and I don't know about anyone's knowledge of 18th-19th century Britain here but the working class just wanted to put food on the table, with most not having been exposed to the good shit that was being traded around.
These days following two world wars, importing basically everything and everyone from everywhere there's as much spicy food as anyone can handle. Decadent times for people's plates. 250 languages are spoken in London if that's any indicator.
