cooking update:
i made scallion oil. put the oil in the fridge, alton said it should be good for a week. i set aside the browned scallions after frying them in the oil.
then i made avocado toast for dinner. used the last of the good bread from yesterday's bruschetta. i added chopped roma tomatoes and the fried scallions, topped with garlic salt and ground black pepper. (she needs to eat high potassium foods.)
now i have yeast rising to make bread in the dutch oven later.
