I believe all the keybindings are stored in your everquest directory with your character's name in the filename and an extension of ".ini". Use notepad to poke around in these ini files. Make a new character and then cut/paste the keybindings from the new character to your existing one.
Other than that, use the "keys" tab on the options menu to set keybindings to what you want.
