Nobody has evidence of that. All anyone knows is what can be seen through a telescope. Which is only the shape and color.

That also contradicts the physics of water on earth.

Not sure what you mean by "mapping around the planets centre of gravity".

The "center of gravity" for the earth is always down. The idea that "up and down" are subjective due to a sphere is more conjecture that has no scientific basis in experiments or observation.
