A classic problem that original EQ devs really didn't think about aside from minimum costs like peridot's and vendor reagents
Pretty much every modern MMO has this economic problem because the players have the power to create money into the world (kill monsters, sell junk to vendors). This they put in systems to drain off that money. (Horses, armor repairs, etc) however these drains often fail or only effective for a short while with one time large plat drains (like flying mounts in wow expansion)
Constant upkeeps do a far better job at fighting inflation in a video game economy. But then it's a careful balancing act to make it palatable to the players
