I would like some advice on picking a class relative to the current state of the server @ lvl 55+.

First, the only class truly in demand on the raid scene is tracker. If you are willing to stare at the wall, you'll get pixels and your guild will love you. If you simply show up to batphones to zerg content, it doesn't really matter what class you play.
However, it sounds like you are more interested in farming items with low numbers. In my opinion the best farming classes are:
- #1 Enchanter: best CC, great buffs, and a charmed pet that outdamages BIS rogues basically means you fill two group slots.
- #2 Cleric: the only real healer pre-Luclin, and by far the best at keeping Enchanters alive with Aegolism/Stun Command. Clerics are boring on raids (buy peridots, cast buffs, ch, count to 10, repeat) and in overpowered full groups but their versatility really shines in small groups.
- #3 Warrior: low numbers mean longer fights, so there are a large number of fun encounters where tanking is critical. Warriors blow all other classes out of the water defensively (or evasively).
- #4 Shadow Knight: Hugely underrated class here. Like Enchanters, SKs can fill two group slots as puller and tank. They aren't as durable as warriors, but for slowable content they hold their own with snap aggro.
- #5 Monk: hugely overrated class here. Yes, raid geared monks are overpowered. They are just as durable as a knight, are slightly better at pulls, and can use clickies to compensate for most spells. But everyone and their brother has a Monk, and the competition for all the necessary equipment is fierce.
- #6 Shaman: aside PoM/Crypt soloing, Shaman shine duo with Monks and Shadowknights. 75% slow + torpor is good enough for most NPCs under 60.
If you don't want to play a healer or a pure melee, that leaves Enchanter or Shadow Knight.
