Maskedmelon, Jamie is a Paladin in the most Absolute sense. However, his god is not the Seven or the Lord of Light. His god is his love for Cersei. He has lived his life in absolute devotion to her, sacrificing material pleasures, wealth, and countless beautiful pussies. This is exemplified by Jamie forsaking his claim on Castely Rock and the fact that he has only ever had sex with Cersei. In fact, the only time Jamie came close to loving another woman was with Breanne of Tarth (sp?), who is also a Paladin in the most Absolute sense.
It's not a rational choice on his end, but rather a spiritual calling and personal devotion.
