Lack of information contributes significantly to game difficulty. The stock market and poker would both be trivial for anyone who possesses all of the information. There's a reason why baseball pitchers try to vary their pitches, because they are easier to hit when the batter knows what's coming. Any NFL team would be at a serious advantage if they were told what to expect from their opponents for every single play.

It's funny that you mention first person shooters, pure strategy games and puzzles, because they are challenging for the fact that you don't have all of the information. A player with a knowledge of the game mechanics, yet are otherwise unskilled who could spy on their opponent's screen would dominate, regardless of the skill disparity for such games. You can try this for yourself at a lan party, place your monitor so that a weaker opponent can see it and see how you fair.

In particular with EverQuest, if you don't know how to spawn Quillmane, the camp becomes significantly more difficult as you try a thousand different theories, whether yours or others on how to get the dumb horse to appear. That's just one example off the top of my head. How many years were people making things more difficult because they believed there was an anti-camp radius, or other such anecdotes going around?
