Alternatively they could work with ministers who only perform religious ceremonies (I expect most who object to same sex marriage will make this change in the very near future) and only offer cakes for weddings performed by those ministers.*
The simplest solution is to just not offer a reason though. Tell the customer they don't like them, because it is somehow less unpleasant if there is no reason.
