Charcoal adds a degree of flavor to chicken and fish but when you're grilling a good high end steak you want to alter its flavor as little as possible. Gas does this. It allows you to bring out the flavor of the meat with just a light salt and peppering and keep it clean. Charcoal is great for bbq with sauces. Chicken. Tritip. Stuff like that.
