Speaking as someone who actually has raided on this server a lot, don't pick a class based on what a particular raid guild wants. Raid guilds want every class if you show up at least some the time and do your job most the time. True, there are some classes that they want more. But unless you like being highly desired in raids, that really doesn't matter. Also, what guilds want is not a static thing. With the exception of monk (there is always plenty of monks), just about every class is highly wanted from time to time.
Also, you don't have to be hardcore to raid...this server moves slow and there is plenty of time to get 60. There are at least 5 casual friendly guilds I can think of that raid.
Rogues and Wizards are always wanted on raids. Often, Clerics and Warriors are highly appreciated as well. The rest just depends on what a guild happens to be short on. I will say that the least useful class on a raid is Shadowknight...but an SK can join a raid guild just fine.
